01 Sep happy spring – experimental walnut bolognaise
Imagine it! How comforting is walnut bolognaise, hehe. Slip of the tongue. I mean how comforting is spagetti bolognaise. hehe I guess everyone has those foods that cheer them up and are comforting, maybe from their childhood I would say. My mum makes the most delicious bolognaise, lots of veges and herbs and wholegrain pasta. It is really very yummy and comforting. So, I am going to try this with walnuts!
The walnuts are so yummy in tacos, I eat this a lot, or in a salad with salsa, and it really tastes like meat. So, lets see! Will it be yummy?
An experiment 🙂
1 cup of walnuts
1 teaspoon of cumin
1/2 teaspoon of coriander powder
1/4 teaspoon of chilli powder
pinch of cayenne pepper
2 teaspoons of tamari
1 tsp coconut oil
2 small cloves of garlic
2 large portobello mushrooms
(other veges as you desire)
1 tin of organic tomatoes or fresh tomatoes (there is this awesome marinara sauce recipe I will have to share with you with fresh / sun dried tomatoes)
2 teaspoon of italian herbs
160 g of gluten free pasta (or two servings)
Grind walnuts in a food processor until chunky and put in small bowl, add cumin, coriander, chilli and cayenne pepper, stir well.
Heat coconut oil over medium heat and cook onions and garlic until the garlic is translucent.
Add the mushrooms and zucchini and cook for about four minutes until soft.
Reduce heat to low (simmer) and add tomatoes and walnut mix as well as italian herbs.
Heat saucepan of water on high heat for pasta. When boiling cook pasta for 8 – 10 minutes as per directions on packet.
I give you: Walnut Bolognaise
It is delicious! 🙂 The spices that go in with the walnuts give it a real kick, and it so comforting 🙂 The nutty flavour is just lush with the tomatoes.
more veggies! more greens, it might be nice to put spinach in at the end, to wilt and give it more of a green presence. Home made marinara sauce would also be awesome 🙂
And considering no cows were harmed in the making of this dinner, as well as the fact that it would be much less acidic in your body, it has got to be good!
There might be a conflict of pairing here, if the walnuts are considered protein and the pasta is starch, in fact I am pretty sure it is an imperfect pairing, , , but, hey as comfort food goes I am impressed 🙂
