T’s Peanut Butter Cookies – delicious

My niece on my brother’s side made a batch of peanut butter cookies this week. They were so delicious! She gave me the recipe: Best Peanut Butter Cookies Ever. She is a very talented mouse, and she says that when she grows up we will live in a house with four recycling bins and save the world.

Here is the recipe:

Best Peanut Butter Cookies Ever

Prep time: 30 minutes, Cook time: 10 minutes. Servings: 36

Ingredients:

2 cups of peanut butter
2 cups of white sugar
2 eggs
2 teaspoons of baking soda
1 pinch of salt
1 teaspoon of vanilla extract

Directions:

Preheat oven to 175 degrees C. Grease cookie sheets.

In a medium bowl, stir peanut butter and sugar together until smooth. Beat in the eggs one at a time, then stir in the baking soda, salt and vanilla. Roll dough into 1 inch balls and place them 2 inches apart onto the prepared cookie sheets. Press a criss cross into the top using the back of a fork.

Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Using an electric mixer, beat butter and icing sugar mixture in a bowl until pale and creamy. Add honey. Beat until well combined.Place flours, cinnamon and milk in a bowl. Add butter mixture. Mix until dough begins to form. Turn onto a well floured surface. Knead gently until smooth. Divide dough in half and wrap each portion in plastic wrap. Place in the fridge for 15 minutes.Preheat oven to 160b0C. Using a well floured rolling pin, roll one portion of dough out on a well floured surface until 5mm-thick.Using an 8.5cm Christmas tree cutter, cut out bciiusts. Place on prepared trays.
